I got this pan a few years ago, and have been using it mostly for steaks and chops. It actually made me a better cook: you can't move a steak or chop to turn it unless it's browned enough. Once it's ready, it'll "let" you turn the meat over. Before I had this pan, I bothered the food too often, checking to see if it was done. I couldn't believe the wonderful crust I got! Talk about Maillard reaction... mmmmm, brown is yummy. ![]()
Cleanup isn't bad, but because the pan is heavy for me, wrangling it in the sink is hard work. Plus, I hate the smell of Barkeeper's friend! Still, it cleans up beautifully.
I already had a lid from a non-stick Emerilware saute pan, so I bought it without a lid. The lid I have is slightly domed, whereas the lid they sell with this pan is flat. That may be a consideration, depending on what you plan to cook routinely.
I recommend this pan highly!
