One awesome pan
Pros: Sturdy, requires no fat when cooking, great handle
Cons: Little heavy, have to be careful not to scratch the pan
We had a very old Teflon pan that needed to be retired and we were looking for a replacement. A while back when I was in William Sonoma I saw the Calphalon Unison series and really liked how well made they seemed.
After about 3 months of use we continue to enjoy how well this pan performs. It heats evenly and does a great job whether you are are searing or simmering. It is slightly heavy which I don't mind and I love the handle.
The non stick coating does a much better job than regular teflon and I also don't believe you run the same health risks with this pan. You can get away with out using any fat in the pan when searing or sauteing and many times you are better of using less fat because of the way the pan is designed.
The pan is dishwasher safe which was another feature we wanted in a large pan. It is the easiest pan to clean you will ever own.
