Calphalon released their Unison line in 2009 and they continue to be great cookware to have in the kitchen.
Recently, we received the “Calphalon Unison Slide and Sear Nonstick 3-Piece Essential Cookware Set” and we were very pleased with the results.
There are 2 versions of the Unison line, one is the “sear nonstick” and the other is the “slide nonstick.” Fortunately, the Calphalon Unison Slide and Sear Nonstick 3-Piece Essential Cookware Set comes with one of each giving you the best of both worlds. The slide nonstick surface is geared towards omelet pans, sauce pans, soup pots and griddles - items for which you would get the most benefit from having a nonstick surface and which promote easy movement in the pan for quickly cooked items such as eggs. Basting eggs is actually quite easy with this pan and you don’t even need to use any cooking spray. In fact, Calphalon recommends that you don’t use any cooking spays with these pans. The sear nonstick surface is geared more towards searing meats and fish to lock in the juices (as the name suggests). Just like the slide nonstick surface, the sear nonstick surface also requires little to no fat in the pan.
The Calphalon Unison Slide and Sear Nonstick 3-Piece Essential Cookware Set includes a 3 quart sauté pan, a 10 inch fry pan, and a single lid which fits both pans. Construction quality is very durable, yet the pans are not too heavy. While the non-stick coating is excellent and does what you would expect, it is the handles we really liked. Often cookware handles seem like an afterthought but that is not the case with the Unison line. The handles have a comfortable, sturdy design and are designed to stay cool during use on the stove. There is also a small rectangular handle on the opposite end of the pan which makes it very easy to move them to and from the stove top and oven. While we did not notice any excessive heat from the handles during cooking, we always recommend using a side towel or pot holder for safety.
One of the best features of the Unison line is the fact that they are dishwasher safe. Most Teflon pans are not safe for the dishwasher and show degradation on the cooking surface after only a few dishwasher cycles (a grayish-whitish discoloration on the surface is most common). The Unison line was specifically designed to handle the harsh environment of the dishwasher. After numerous cleanings we have not observed any noticeable wear on the pans as a result of the dishwasher.
Like most non-stick pans, metal utensils should not be used with the Unison Line of Nonstick pans. Wood or silicone utensils are fine to use with the pans, but any metal utensil will damage the non-stick cooking surface of the pan. The Unison Slide and Sear Nonstick pans work very well cooking-wise and have become our go-to pans for everyday cooking. The heat distribution is even throughout the surface of the pan and you get an excellent sear on whatever you might be cooking. The pans are oven-safe up to 500 degrees Fahrenheit, however we do not intend to test them at such high heat as it will degrade the pan more quickly and shorten its shelf life. 350 to 450 degrees Fahrenheit is usually the range we recommend for use of a nonstick pan in the oven. Although we can’t see using these in a professional setting, we think they are perfect for the home. With a little care they can last a lifetime and they even come with a lifetime guarantee.
