We do a lot of hawaiian dishes and we purchased this skillet for wedding catering & birthday catering.

We noticed that it keeps the food evenly hot.  We do not like unevenly cooked food when we do our wedding catering because cooking at high volume makes consistency difficult.  

 

I have used this with many dishes and have no complaints.  It cleans really easy due to the nice finish.

 

Recommend this product highly.

Purchased this skillet and am quite pleased with it because I have been searching for a true wok. It has worked great for making some Thai dishes, but it is recommended that high heat is not used.

The large area was great for cooking curry for five people, again, though, not great for cooking real Chinese dishes that require very high heat for true wok cooking.

It has come in handy for a myriad of dishes, I just wouldn't stop looking for a true wok to cook you Chinese dishes.

Pros: Great large skillet, accomodates large quantities of food that isn't cooked on high heat.
Cons: Not really a "wok" substitute.
