Though I am a retailer for the knife, I actually own several knives from the 1905 series. I use them mostly when entertaining and working in the kitchen when others are watching. Most of my work is done with more economical stamped blade knives. The first thing I liked about the 1905 Santoku, is the blade size is easy to work with, and the blade holds an edge really well. The knife is nicely balanced, though I have used forged knives that were slightly better balanced. The weight is perfect, not overly heavy, but still enough weight to aid in cutting.
