Pros: Good edge holding, nice profile shape
Cons: Heavy, narrow profile
I purchased this knife new on ebay for $45 (I believe the MSRP is $99) as my primary cook's knife. It takes a little bit of elbow grease to reprofile the edge, but it takes and holds a fairly sharp edge. It responds well to steeling, and can handle some fairly heavy duty work. The profile is narrow and straighter than most german knives. I think it's ideal for breaking roast chickens, and is narrow enough to portion out roasts, should you not have a slicer. The narrow profile could be a knuckle clearance issue for cooks with larger hands, and it's not so good for picking up those piles of vegetables you just chopped. Also, it is a German forged knife and is a bit heavy.
