Cons: brittle, expensive
I bought this knife to replace my Chef's knife for Chopping veggies and for longer use tasks that have been giving me issues like chopping boxes of mushrooms and tomatos. I picked this knife because it had the divits in it that let foods slide off with less drag and the shape and size I find give me a better range of motion at the mid of the blade were I do most of my chopping.
Most people I have talked to in my circle of chefs ether love this or hate it for the same reasons. its light and its small. I use a pinch grip while cutting up veggies so I actually don't mind the lightness, I have large hands and I don't have issues with the handel ether, which is something that gets thrown around a lot on forms.
This knife is very attractive and wicked sharp, I'm happy I bought this knife and as far as global goes I have my eye on one or two other knives that I think I will really enjoy for being light the rest of my knives I'll have to go with a different brand and style.
this knife is a little soft for a high end knife and it is also difficult to sharpen more so than western knives, that said this knife if used properly wont require as much upkeep anyway.
overall I think that Globals are a little over priced, I think there performance is outstanding but has flaws with being brittle,if you are buying one for more agressive work I sugest a MAC or if you have your heart set on a Global go with a Forged version. I really enjoy the handel and the the light feel of the knife the way it balances is also great if you use a pinch grip, if you tend to grab the handel then maybe this knife isn't for you.
best Advice I can offer when Purchasing Globals or any knife is to consider what you will be doing with the knife task wise, and what should your expectations be. for me this was a perfect choice.
