Pros: Extremely comfortable, well balanced, distinctive

Cons: A bit expensive for what it is...MSRP is $400

I've owned one of these for over 3 years now, using it daily.  I've never had to sharpen (grind) it, just an occasional run along a fine steel, and it's held a wonderful edge for everyday prep.  It took me a few days to get used to the handle; it's "different," but after using it for a week or so I began loving it.  If you've got fatigue issues with your knife hand I'd suggest trying one of these out.

Any opinion on the Shun Premier or Reserve knives? Assuming you've either owned them or had some "experience" with them.
Beautiful knifes, especially the Reserve. I don't use my Reserves on the job, however, I keep them at home...where they don't get much use, as I work all the time haha. They've got a good weight to them, they're balanced and just gorgeous to look at. Remember though that they're a Japanese take on a "German-style" knife. Whereas I couldn't see myself working with them for hours on end, they're perfect for a home cooking enthusiast that wants a more expensive, quality knife that will last forever if you take care of it. I'm not sure if you just like the look of the knife or you're looking for something comfortable to work with....or if you just want a flat-out efficient knife.
