Cons: Expect a smoky kitchen.
I love this pan! It gives you the grill marks you like with the accompanying grilled flavor that can only come from high, dry heat. Now, don't expect the outdoor, grilled smokiness in the flavor. That flavor can only be reproduced by actually cooking outdoors over charcoal/wood. Do expect, however, your meats to have that grill accent flavor that you would find from your neighborhood grill restaurant. With that said, you need to have your stove set on high heat to achieve the flavor and marks. But, as long as you have a VERY WELL ventilated kitchen, you will be fine. Turn on your vent, open the windows and doors and you will be fine. I get the marks on my meals, and then throw the pan in the oven to finish at a lower temp. Durable and handy pan to have.
