Pros: A useful twist on the one pot meal concept
Cons: Some recipes are more to include particular ingredients than really work well
I've been looking for recipes and ideas I can ship off with my daughter to college and this book had a good variant idea on the one-pot meal.
But the writing is chatty and cutesy. This doesn't impact which recipes work and don't work, but I found it annoying. Tastes will vary. There are plenty of photographs if that's what interests you in cookbooks.
I've found myself roasting vegetables and chicken thighs simultaneously for dinner a few times over the last few months and I was hoping to see more theory and guidelines on how to structure such a meal. I recognize I'm in the minority of cookbook readers where I like theory and discussion of principles so I can venture off on my own more rather than readers who are more interested in the recipes. This book doesn't really help you learn to cook this way on the fly. But it does offer a number of dishes, simple to execute, without hard to find ingredients or tools. I think the chicken and pork dishes were more successful than her fish and beef choices. Seafood needs critical timing which doesn't pair so well with the other items on the sheet pan.
The author liked to use the grid racks that fit in a sheet pan. I like them too, but they do pose some problems. Without convection the heat doesn't flow beneath these well enough, and even with convection, there would be some problems. Particularly, her recipe for steak and asparagus is problematic. The asparagus not covered by the steak will over cook, the covered asparagus will struggle to cook. I think it was included more for covering all the ingredient bases than because it is a good execution of the idea. And there were others as well. Oven wilting spinach as part of a sweet potato filling.
Oven Fried fish is not a one pan supper. As much as I like empanadas, I wouldn't call that a one pan supper either.
But there are recipes that work, including that empanada one. And finishing a pan of vegetables with seafood added at the end and watched carefully under the broiler is a fine technique.
It's a book worth going through with a critical eye and picking up some good new ideas. At the time of this writing, it's readily available and has already been discounted $5.00 off the cover price at the major on line retailers. If you're still skeptical, wait for a sale or a coupon. It does have value. I used my tax dollars and enjoyed it from the library.
