Pros: sharper than any knife i have
Cons: need to get acustomed to the handle
I have this knife for just under a year and it is one of the sharpest knives that i have. compared to a miyabi fusion designed by morimoto and his team, i felt that this knife felt sharper, and went through meats and vegetables smoother. The angled handle required some getting used to, but i was very nice. I want to baby this knife since it was expensive, and i worry that the edge will become dull, but it has retained it's edge surprisingly well.
