I want to clarify my seasoning comment on the Beer Can Chicken. Everyone's taste is different and its expected you'll season to taste and tweak a recipe. My point is more along the lines of with all the great technique info in the book, I would have hoped for more technique in how to build a spice rube you like. And provide a variety of rubs with a range of flavors. This is a complaint I have for a lot of grilling barbecue books including such names as Jamison's Smoke & Spice or most of Cook's Illustrated recipes that use a rub. Raichlen does go the extra step of suggesting alternate uses for many of his techniques and recipes so that's a nice touch.
