Pros: The recipes really are the "best"
The title says it all.  This book makes me want to put my other books in storage.  Everything I have made is not good-it is fantastic.


This book discusses why a recipe works and the science behind it

As the America Test Kitchen likes to say..they take the guess work out so we don't have to
