Pros: sharp ootb, sharpens easily, holds edge well, balanced extremely well

Cons: have major callous from constant use

I own Misono UX10, Shun, and Tojiro. Not quite as sharp as the Shun or Misono ootb, but with a little work on the 1k stone it can be even sharper  than the Misono but with a little more heft and rigidity, which I love. I work in the kitchen of a major luxury hotel brand and It just seems to get better with heavy use.  Overall  theTojiro DP is amazing for the price.

Though I think the star rating may be a little generous I have to agree the Tojiro DP line is a contender for best value in Japanese knives.
I do not have the exact knife reviewed, but will note that the three I do have all perform well, sharpen up easily, and the VG10 core steel holds a sharpening for a good while (or a really long while compared to my previous Henckels Pro-S) and all are inexpensive enough for both home or professional use.
When I had evaluated the DP originally for purchase I was pleased to hear from those who used them in their work as professional cooks etc, and one of the comments that stood out was that even though they had owned more expensive knives that were of a higher quality and performance their Tojiro DP was still being used on a daily basis.
One other point I do not see often enough is that though these are true J-knives etc the DP is still a pretty sturdy or stiff knife. Unlike some of the thinner higher end brands there is a reduced flex that would likely feel more familiar or comfortable to someone who is accustomed to using many western or German brands.
Overall I remain very happy with the Tojiro DP, and know it is one of the best values in my drawer :)
I have a couple o DP's and also think they represent a great value or a good knife. I purchased the 11 inch chef's, along with a couple of others, for my son, and he is happy with them My own have held up well.
