Hi all,

I'd just like to thank everyone here for such a great site. I've been lurking here for some time, but finally decided to register and start participating in the forum (instead of simply lurking).

A little about myself?

First off, I'm no Chef...not at all. I love food and I enjoy cooking at home and at work. My love for all that is tasty is what drives me to enjoy cooking as much as I do.

So far I've only taken one "cooking class" from The French Culinary Experience in Wheeling Illinois. While I can admit the stocks and sauces class I took was an express course, to say the least. It still opened my eyes (and taste buds) to how I should have been cooking all along...and why my sauces would never turn out as I had planned or had hoped.

Some of my favorite foods to cook are Italian, Southern (U.S.), and various roasts, poultry or game with accompanying sauce.
