I realized that it's a little rude to read the forums all the time but not introduce myself. So, hello I'm a cook with a few years experience working in some small restaurants here in Chicago, who is right now making the move into hotel work here in the near future. I just found out today about that last part. Chef Talk has been a great resource so far for information and opinion, and I know it will continue to do the same.
