I'm opening a restaurant and I would like to know how many dishes, glassware, and silverware should I buy.

Hi and Congratulations!

In most places, I think the normal is one and a half times the number of chairs you have. 40 chairs...60 sets of dishes. In our place we have twice the amount because we have a buffet....(they need a clean dish to go for seconds)..and we are the cooks and dishwasher...so if we're cooking the dishes aren't done for awhile.
