One of my favorite dessert wines:

“The legendary ‘Tokaj Eszencia’ a precious and mysteriously sweet wine that has
been credited with semi magical properties (including that of being an elixir of
life), is made from the juice that flows from the aszu grapes through the pressure
of their own weight. The production of Tokaj is complex and lengthy and any
visitor to the strange cellars underground in the region will be astounded by the
thick blanket of mould that covers the walls and must obviously have a marked
effect on the wines that mature many years in the small casks known as gonci.” –

dessert wine

I love this wine from Hungary. The wines from this region have been producing wine for almost 1000 years. Old stuff. It's the nectar of the gods for sure. Tokaji Aszu maybe a bit more affordable than the Eszencia though. So glad it making a comeback.

Chef Azlo have you tried Moscato Passito di Pantelleria from Salvatore Murana, this is one of my favorite dessert wines.

Sweet Wine mmmmmm.....

I love sweet wines, but have not had either of the ones you have discussed. Just icewine; that glorious syrup!!!!

My husband always pokes fun at me and thinks I should take up cocaine, he says it would be cheaper hehehehe.

I've never used it in a recipe though...any suggestions?
