truffle oil

What realy goes into white truffle oil. Ive heard there is acualy no truffles used in the preperation. If so what are the aromatics that are in the ingredients?
When you hve a chance look at the ingredients on the bottle. There is no mension of truffles.This is specifically white truffle oil.

Assuming it's not some cheap imitation product, white truffle oil should be olive oil flavored by real white truffles.

I just checked my bottle of Italian White Truffle Oil, and it contains olive oil, white truffle, and "white truffle aroma"(?). The French brand of black truffle oil I used to use at work was sunflower oil infused with (French) black truffles.

As Mark suggests, beware of cheap versions. If it seems like an unbelievable bargain, it probably is. The real thing is expensive, but a little goes a long way (even if too many restaurants use waaaaaaaaaaaay too much at a time. :eek: )

Urbani was pretty good, but i've heard they are gonzo. The cheap ones are flavored with artificial "scent". The good stuff is gonna cost you.

oh man you wonder where they get truffle scent....
I just went to a beautiful restaurant with a 30ish chef who was heavy handed in that it was in alot of dishes with truffle oil...
wild shroom amuse with truffle oil,
cinnamon/white truffle oil creme brulee...oh man comeon....
etc.....at least 4 more throughout the menu.

Alittle goes a very, very long way.

"Too much" truffle oil is like too much cheese, too much ice cream, too much foie gras, etc. :)
