Recipe Idea

I was working on a Duck Confit Ravioli with black trumpet mushrooms and i was trying to come up with some ideas for the sauce to go with it.

Some Ideas i have been tossing around
Quince Cream Sauce
Calvados Sauce
Almond Cream Sauce

I wanted to know if anyone had any other ideas i am looking for something kind of unusual

Are you cooking them a la minute? If yes a foie gras/beurre noissette with plumped dried cranberries deglazed with a splash of ver jus over a sunchoke sockle.
