Strawberry/ Rhubarb PieThis is pretty much how Grandma made this Pie, on the farm up in SW Virginia. I believe there is an issue with the leaves, as you mention.
Preheat oven to 400F
1 1/4 cup sugar
1 1/4 tablespoons flour
1 beaten egg
2 cups Rhubarb, cut into 1 inch pcs
1/2 cup fresh Strawberries, cut in half
fresh pastry for deep dish 9 inch pie plate, top and bottom crust
Mix the sugar and flour together. Add in the beaten egg, and mix well. Add this to the Rhubarb and Strawberries. Stir to coat the fruit. Line pie plate with pastry.
Place filling in the pie plate, and arrange strips of crust in a lattice fashion on top.
Bake at 400F for 20 Min, then reduce heat to 350F, and continue to bake for another 20 Min.
Remove from oven, and cool to room temp on a rack.
