Squash Bisque - bitter squash - need help!!!

Just cooked a 30 quart pot of squash bisque and it taste awful! A real, real, real, bad bitter taste. The only thing that we think that could have caused this is some bitter yellow squash. It was home-grown locally, fresh and cleaned and washed before using.

Any ideas on how to overcome the bitter taste?

Ingredients: butter, chopped onions, potatoes, carrots, yellow squash, zuccinni, water, bovril chicken base, cayenne pepper and salt. Once veggies are saute in butter, water is added along with chicken base and seasonings, then cooked for 90 minutes. Last step - puree.

What type of yellow squash? You didn't give us a proportion ratio, are you sure it isn't the zuccini? A bitter zuccini can go very far. I think I'd try adding some sugar, and maybe a bit of salt ( salt can "sweeten" many vegetables as they cook) and then look at some heavy cream to mellow it out.

I like to add some maple syrup (real) to my squash bisques.
What N said is true too about the salt and I also agree about the addition of cream to mellow.
