Just wanting to know if anyone has had any success with cooking brisket in a roaster and if you need to do anything different than when you do it in the oven.

Hey Doug. Dont recall having tried to cook a brisket in a roaster but dont see why it wouldnt work just fine. Now do think some of the technique would depend on how you otherwise cook them things in the oven and which species of brisket we speaking of here. Only oven briskets I have cooked have been foil wrapped trimmed packers and will attest a person needs a grease dump or two and suspect the roaster present a similar set of issues on getting rid of the extra fat. On the other hand..a little trimmed up flat could prob skip that step.
