My Oven Quandry

I rent, so I have no choice in my major appliances... or do I? I've decided to get a range of my own and put the landlord's one in storage. Any advice as to how to store one? Any advice as to what to get as a range? What features? All keeping in mind that the price should stay as low as possible, just in case I have to leave it behind when I leave due to some unforeseen circumstance.

I'd check eBay, I just saw a convection steam oven go for $500. Sometimes ranges go cheap too.

Good call on being careful incase you lose the oven to your landlord. I leased a restaurant and got locked out when I gave up the lease. I lost a few grand worth of equipment, but for changing the locks 24 hours early, the landlod will be lucky to get another two cents from me.

I have never used convection and was going to give up steam in favor of saving money. What is convection like to use? Better than traditional?

Shame about your loss. That's always rough. What did your landlord do with your stuff? A friend of mine benefitted from a restaurant going under (a big chain that closed a store); he got the equipment for a decent price, but hasn't done anything with it yet. Where I live, tenants have very few rights. I've learned the hard way, but skyrocketing house prices have kept me from being able to buy.

They are going to tear the restaurant down, the building is in that bad a shape. As for all of the stuff inside, they are auctioning it off.

My biggest loss were two sourdough starters that I had been feeding for over a year. One started with rye, the other with raisins. Those got buried somewhere in the dumpster before I knew I would not be able to collect my things.
