spider web patterns used on some deserts and pastries. It's made by alternating different colored sauces - then drawing lines through them with a toothpick or other. I know there's a French term for this but can't recall it.

There is a French word for this process and I think it starts with a "P". I just can't remember what it was. I was hoping someone on this forum would know.

Lines on mille-feuille or napoleon

Marbrer un mille-feuille au fondant or the verb marbrer=to marble. Marbrage au cornet.

You're right- the sauces used could be coulis or colored creams, chocolate,etc - but what is the technique called to create the spider webs patterns on top of the pastries, cakes,etc? I keep think it starts with a "P".
