I am a culinary student at the Art Institute of Dallas set to graduate Dec 2006. I have been in the restaurant business for more than 15 years however. I am formailizing my education and hoping to achieve certification by 2008 or before if possible. I have three cats, 4 children and 2 grandchildren. I am madly passionately in love with food and the process of creating wonderful food. I love the process from concept to prep to the final plating. I am hoping to do a short apprenticeship in Europe after I graduate, but I am not sure how to go about making that happen. I am open to suggestions and would love to hear from others who feel like I do about food.
