The local market has had shark steaks on and off this last few weeks. Im thinking Id like to give it a try.. Any hints or tips to grilling them?

Soak the steaks in milk or buttermilk for about an hour to get rid of the strong smell. I wrap the steaks in corn husks with tarragon butter inside, then cargrill and they pick up a nice flavor.
