Professional Artisan Bread Class

I am looking to open a bread bakery and would like some quick formal training to supplement my amateur experience.

So far, the only option I can find is through King Arthur Flour. (any reviews on their class?)

any culinary/baking school

The Artisan Baking Studio in NY
There is the Baking School in Kansas
The French Baking School in Chicago
Johnson and Wales has short courses as does
CIA, Culinary Academy in NY

If I where you I'd google for a class in your area.
