i wonder how they made the foam sauce and what is char-grilled ?

What were you watching or where were you eating that led to the question?

In my experience "char grill" means pretty much charcoal grilled. Over open flame.

Foam is something I haven't tried. It seems kind of faddy, but I assume that it uses a CO2 canister similar to making instant whipped cream only the emulsion/liquid they use is different. (some sort of sauce instead of heavy cream?)(could you imagine if they got them mixed up? :eek:)
