Wedding Cake White Frosting & "Better Butter"

I spoke to a baker at a bakery where I had once gotten a wedding cake.

I wanted to make a home version of that white icing that gets crispy on the edge while remaining soft on the inside. Some people consider it sickeningly sweet. I love it and want to try to make it.

Anyway, the baker said it is made with something called "better butter". It is available only to bakeries, has to be refrigerated and comes in 200# blocks. It is a type of shortening. The frosting is made with this ingredient, water and confectioner's sugar.

Has anyone ever heard of "better butter"? The spelling might be wrong.

I googled it and did'nt get anywhere.

Please help.

Go to the Wilton cake decorating site. Their "Snow White Buttercream" may be just what you are looking for. It is very sweet and crusts over a little. They also have several forums where home bakers list and talk about their favorite icing recipes
