I have a recipe for a Texas Pecan Cake. It has candied cherries and pineapple in it. I don't really like these. Would it be possible to substitute rehydrated dried fruits (maybe soaked in bourbon or rum) for the candied stuff. It's one of those almost flourless, really dense things held together with sweetened, condensed milk.:chef:

if this is just you enjoying the product, its worth a try.if you are creating it for a party of 200, follow the recipe....
dried fruit and candied fruits are both dry-ish so you could swap them out.
just remember the sulfites in the dry fruits are not generally in the candied ones.

Good to know. I buy dried fruit that specifies no sulphites (sulfites?... just when I'm not near any of my dried fruit) at Whole Foods.
