What evaporates during cooking? Is it only water or something else too?

It is mainly water, but also includes volatile compounds, alcohols and aromatics, and when frying, the moisture changing to steam throws off oil particles, as vapor.

Which then, of course, settle on darn near everything in and around the kitchen. :D
