Well this isn't actually the first time for me here but it is the first time posting. Sorry but between work, work, work, a new family and all.............................well you get the idea. But why post now? Well I got this operatunity to go work as the Sous at a very well respected restaurant that just happened to be very close to where I was born. So I'd be close to family and it is out in the country "nice for a three year old girl". How could I say no to that. Then what, two months in.............I'm really getting comfortable at the new place, the town...........Fire. Oh yes, a fire broke out, "after close, no ones fault and no one hurt". So now I got some time on my hands,at least I'm still getting paid(thank goodness) but with 6-8 months to go I might just go a little stir crazy. Anyways sorry to drag on but nice to finally get to really look around here and talk to some other chefs.
