Just a quick "hello" to everyone here. I joined this forum to learn more about your fine craft, so I too, can perhaps become a culinary tour-de-force. I used to be a maitre d' years ago, and I actually turned down an offer for full tuition at the CIA. Oops!
Anyhoo, I'm not trying to become a chef, as I make a decent living as a "Senior Network Engineer" (aka computer geek), but I would like to gain the knowledge that a chef has, so off I go. I ordered this really thick book from Amazon last night called "The Professional Chef" - maybe I'll start there.
