Greetings and salutations!

Greetings to all,
I'm not a professional, but I've been around a stove for nearly 40 years. My son is a Culinary grad from NECI...guess the nut don't fall too far from the tree.
I enjoy smoking meats and cheese. I've been at it for years and am still learning. On the stove-top, lately I've been playing with Thai. I just KNEW that there HAD to be a use for coconuts besides macaroons!
Well, that's it in a nutshell. Now I really need to pick someones brain. I believe the Cooking Forum to be the proper venue.
