egg white frittata??

My girlfriend is looking to make some healthy snacks that she can bring to work with her. One idea that she has is to make a big egg white frittata (10 eggs wites and two whole eggs is her idea) with a bunch of veg in it that she can slice up and have for a few days. I am very sceptical about the idea and think that it will be way too watery and won't hold. Am I crazy? Will it work? Anyone have other suggestions for healthy homemade snacks besides carrots, celery sticks, nuts, raisins and other mundane things.

Yes it will work. Good with pasta leftovers too.

The South Beach Diet book (and cookbook) has a recipe for mini-quiches you make in muffin tins.

I'd recommend that the veggies be sauteed before adding them to the egg mixture or they'll be too soggy. I'm a home cook and learned that from experience :( rather than from an instructor.

hey mezz, everybody knows that things learned from experience stick with you way better than those from instructors... at least that's how I feel. You always give great advice.
