Obtaining a staging/Part-Time gig

Hey all,

I have been trying to get a part-time gig at a nice restaurant staging since I really just want the experience. It's been pretty unsuccessful. I usually get no reply, or "sorry let me know if your schedule lets up as we need people at a certain time." What is the best way to approach this? I live in the Bay Area and have read quite a few experiences about others finding more than one part-time staging jobs. I am looking into applying to culinary school for 2008 but really want to get a job in a restaurant before I start the trips to France and application process.

Any advice?

Staging is generally regarded as in inside kind of relationship. What I mean by this is it is not the type of gig an at home cook gets. The nature of the stage is one of one chef, or cook, going to another restaurant to learn from a chef that he/she respects. It is professional development. Kind of like how one teacher may sit in on another, more experienced, teacher's class. As an at home cook who is looking to go to culinary school what you want is a job that let's you know if you want to plunk down the massive tuition before you do so. I advise you to take a job washing dishes and never stop letting the chef or sous know that you want to learn, prep, mop the floor etc... The nuts and bolts of a kitchen are all in each persons willingness to clean. If you are willing to do that for six months because you are serious about being a pro, then you should go to culinary school. Or don't. Frankly, I don't see the value in, but that is only because I went to the school-of-a-whole-****-lot-a-tickets.
