so i made a few coconut cakes at work. i was going to frost them with the reccomended (from ina garten) cream cheese frosting and mask the sides with coconut. simple. maybe too simple. then i thought of making it pina colada style. soaking the cake with rum syrup, garnishing with dried paper thin pineapple slices. but im stuck on the filling. pastry cream? pineapple curd? hmmm? and what about the frosting? french buttercream? rum flavored? :crazy: got any ideas.. ? thanks!
