Have you tried Braggs?

Anyone ever cooked with this stuff? Did you like the taste of it?

I purchased a bunch of shitaki mushrooms (which I've never had) and upon getting my groceries home and putting away, I kept noticing a funny smell.
It was the mushrooms of course. Really quite disgusting. I'm not sure I'll get past the smell well enough to eat the suckers!

Anyway, instead of using them for what I intended, I just want to cook them up and get rid of them.
I found a recipe that sounds interesting but it calls for Braggs.. This is what the Braggs looks like..

I do have Tamari soy, and will use that instead.. But now I'm really curious about this Braggs, and how close it tastes to the regular soy..

I find Bragg to be a more mellow taste, not as overpowering and salty as soy and tamari can be at times. Depending upon the application, I actually tend to favor Bragg over soy and tamari. The taste seems rounder and more full to me because it hits more parts of the palate than do soy and tamari.

I use Braggs quite a bit, especially when making tofu dishes. It has that big round "umami" taste.
Marinate firm tofu chunks or slices in Braggs for about 15 minutes, then roast in a 400?F oven until golden brown. Great in salads for a protein boost. the slices make great tofu sandwiches.

I will see if I can pick some Braggs up at my local health food store.. I like the idea of the "soy" being more natural..

Mushrooms should have a fresh, earthy smell. If they smell bad they may be off. Improperly stored or old mushrooms (especially those sold in styrofoam trays covered with plastic wrap) can sweat and become moldy, giving off a foul smell. Mushrooms should be stored in a paper bag in the fridge. Never in a plastic bag where they cannot breathe.
