Oil Free Salad Recipe Wanted

I'd like to find an oil-free salad dressing recipe. Can anyone help? Thanks!

You can try using wine or fruit juice (citrus or otherwise) in place of the oil. How about using pear nectar with a shot of acitidy from wine, lemon or vinegar, plus herbs, for a salad with greens, walnuts and fruit?

That was the first thing that came to mind. I usually don't advocate using bottled dressings, but I've used a couple of Walden Farms fat free products in the past as a starting point for my own dressings. They small amounts of starches and gelatins in place of oil to emulsify.

Here are two recipes I have for non-oil dressings. Enjoy!

Hot Bacon Dressing

3 C water
1-1/2 C sugar
3/4 C vinegar
1/4 tsp salt
1 tsp chicken soup base
1/2 tsp pepper

Combine above ingredients and heat to boililng. Meanwhile...

8-12 strips bacon, diced
1/2 C chopped onion
1/2 C flour

Brown bacon and remove to water mixture; fry onion in bacon fat, adding flour slowly, let bubble 3 minutes. Add to water mixture and stir until smooth.

Serve warm over fresh spinach salad.



Roquefort Salad Dressing

1 C sour cream
1 T lemon juice
2 T catsup
1/4 tsp garlic salt
2 oz Roquefort Cheese

Mix all ingredients ecept cheese. Crumble cheese and stir in last. Let stand 1 hour or more to blend flavors.

Hi Shel
this is a salad that my DH and I have quite often. Not a very fancy dressing, but we both really enjoy it..

One red grapefruit
one orange (if on hand)
plain yogurt
fresh spinach or fresh leafy type lettuce of choice (we mainly use spinach)
some green onion
A little raw califlower broken into small floretts. (if on hand)
Honey or organic Agave Syrup (lately the agave syrup. Its good!)
Oven toasted slivered or sliced almonds.

Peel and section the grapefruit over a bowl to collect the juice. Squish out as much juice as you can from the peel also.. If using the orange, do the same..

Mix the collected juices with plain yougurt and about 1 tablespoon honey or syrup.. I don't have any specific measurements for the yogurt as it depends on how much juice you have.. Maybe around 1/4 cup or so..

Whisk all dressing ingredients together. Pour over the mixture of spinach, green onion, florettes, and section fruit that is already arranged in individual salad bowls. Sprinkle toasted nuts over all..

This is not a thick dressing..But quite lovely if you are a grapefruit fan tho..

You can fool around with this salad a lot. I sometimes add sliced green grapes, or strawberries instead of the orange.. Just depends on whats in the fridge at the time!
