Marinade question

Two weeks ago, I marinated some boneless, skinless chicken breasts in olive oil, lemon juice, garlic and herbs in anticipation of serving dinner to my brother and his wife. Our plans changed at the last minute, so I threw the Ziploc bag of chicken and marinade into the freezer, where it sits as I type this. I have guests coming on Wednesday for a BBQ. My question is, will the breasts be SO lemony as to be inedible? Or will the marinating process have been on hold in the freezer? Thanks in advance for your advice, Cafe comrades! Ann

Hi Mezz,

You really should be fine,The lemon juice with freeze into crystels and not penetrate the frozen chicken. Just defrost in the fridge. Ann,the only thing I would do is when the chicken are defrosted remove them from the bag and gently squeeze them and then pat them dry,This his help get rid of some of the moisture that formed on the chicken,and it will not splatter.What happens is the moisture particales stay in the meat even after they are defrosted,when you go to cook it it boils the inside of the meat and can really hurt the texture.

Also, if it is a bit to lemony you can whip up a sweet bbq glaze which will compliment.
