Horseradish Cheddar

Today, I bought a hunk of horseradish cheddar. It is a pretty tasty piece of cheese, but a little hot to eat straight.

Any ideas for using it?

Sounds to me like a roast beef sandwich would be the natural thing to eat it with!

A roast beef sandwich would be unbelievable with the horseradish cheddar, especially if you toast the bread and melt the cheese. Another suggestion would be simply to use it in a fondue.
