Recipe for chocolate and Chevre

There was an article in chefswarehouse of Chef Francois Kwaku-Dongo from South Africa who worked for Wolfgang Puck for years and is now with L'Escale in Greenwich CT. He featured a beef carpaccio kicked up with cayenne & honey with a side toasted baguette slice topped with goat cheese and finished with African Chocolate dressing. (page 29, Nov or Dec 2006?)

Kuan,
I just did a small wine dinner and whipped chevre and bittersweet
chocolate together until smooth. Made a ganache first actually.
piped them into mejoul dates from california. Pretty darn nice. The
combination really worked, especially in the date. I gave the dates
a quick bath in port before filling. Oh! I put a pretty good amount of
fresh ground black pepper in the mixture as well.

Nope... not my kinda thing at all. Doesn't the sharp pungency of the goat's cheese mask the silkiness of the chocolate?

wasn't really the silkiness of the chocolate I was looking for.
It was the combi of the alkaline chalky flavor of the chevre
and the bitterness of the chocolate. The chocolate met the
date and the date met the goat. Just came together. Have
done it for cigar smokers as well.

Russia has farmer cheese covered in choc....it's ok
cooking with all your senses.....

Dessert

The two together depend on how you use it.

My favorite is chevre, chocolate and hazelnut cheesecake.
