Well i followed the American Test Kitchen recipe today with some changes. I used beef chuck top roast i bought at Costco that comes in 2 pieces. I browned it in a sauté pan that had rendered regular Oscar Meyer bacon fat then transfered it to a 6-qt crock pot. I cooked the veggies in the sauté pan used in the recipe but first chopped the onions, garlic together in the Kitchenaid chefs chopper and then the carrots, i figured it would melt into the sauce better. Barolo around here is $50+ a bottle so i used 2 cups of Bolla Bardolino as the wine. When all this was hot i poured it in the crock pot over the meat and then added carrot chunks and quartered red potatoes. Set the crock for 8 hours and when it's finished i'll removed the meat, potatoes & carrot chunks to a plate then pour all the rest into a sauce pan and finish the way the recipe follows.
