3 Must-Have Ingredients in your kitchen

Aside from the obvious salt and pepper, what do you always like to have in your kitchen?

My top three would be shallots, good EV olive oil, and garlic.

The same 3 you mentionned Entropy, plus french shallots, I found some from Sri Lanka, delicious just on plain bread :D

French and English mustards (does that count as two choices?)
Good EVOO
Tinned Italian plum tomatoes

Good thread!

I cannot cook without garlic, rosemary and sage.
If it's ingredients you mean, I'd have to say eggs, butter and soy sauce (or ponzu).

I have a new favorite too, not a must have, but something I have been putting in almost everything recently:

Tobasco's smoked chipotle sauce.

Lessee ..... pasta, ground beef, tinned roma tomatoes

But how can I leave out onions...garlic...cheese...eggs...bread...bacon... lemon juice... oh my!

Working in a pastry kitchen i would say sugar, cream and flour (but for flavoring 63% chocolate, pistachios, and orange). In a savory kitchen thyme, roma tomatoes, evoo.

garlic, thyme, lemon or hot sauce (I'm sodium restricted and these do much of the stand in for salt)

olive oil, acid (viniager or lemon juice), butter I think....but thyme/rosemary/chipotle/garlic/parisian herbs are all used regularly....ugh 3?!!!

I couldn't possibly limit the list to a "top three." The important and indispensable ingredients would change based on seaso, what I'm cooking, and my mood.

Tonight I'd say EVOO, pasta, and Reggiano. In the moring it would be fruit.

I always like to have knives and a good cutting board in the kitchen, and my stock pot is truly important.

- Rice (long Grain or Aborio)
- Garlic (a lot)
- some kind of meat/seafood

I guarantee you, every single one of my dishes that isn't a dessert or a sweet contains garlic. I love the stuff. Good EVOO is also high on my list, and any kind of high quality cheese is up there too. Runners up would probably be canned tomatoes, pasta, onions, fresh herbs ,dried herbs, good stock, bacon/ bacon drippings, but you probably get the idea. :lips:
