It's a Monster!

I didn't think they could get this big..... got a zucchini (courgette) that's over 2 feet long lurking in the garden.

What to do with it??? Is it too big and tough for any use? Help :cry:

Up in this hemisphere, that's the sort of veg neighbors leave by your door in the middle of the night -- it's so !@#$%^&*() prolific and, well, BIG! :lol:

If you look for recipes for zucchini, you'll find suggestions -- they're close enough that something might work. You might be able to grate it for zucchini bread, or slice it and pickle it? It's mostly water, anyway.

You can substitute it for a cucumber in a gazpacho, gazpachos are always awesome, escpecially in this hot weather (for me anyways.) Toss in some fresh tomatoes (if you have those in your garden), onion, garlic, red wine vinegar, olive oil, a shot of Tabasco, (maybe some chopped jalapenos if you like it a little more spicy) and some fresh parsley if wanted. Season with salt and pepper to taste. This is the gazpacho I always use and it always turns out great. Stays in the fridge for a while, too. Oh, and I always serve with some lime wedges as well.

Suzanne - it's better getting a zucchini on your doorstep than a horse head in your bed I guess (ewwwww gross sorry!) Had a quick look around - sounds like I could grate and freeze it for later use too, will give the bread a go also, got a bread maker (I'm no baker) so it'll be an easy experiment.

Austin - Will try the gazpacho - sounds delish - got lots of cherry tomatoes and parsely and chillies in garden too so it should be good.

Wondering if a soup with chicken stock and potatoes and onions might work.....off to carve the Monster...thanks :)
