This is why I do it!

It has been a bad week for me, about 15 combined hours of sleep for the past 5 days. I was very irritable today, and was solely looking forward to cleaning and getting out so I can finally relax.

During the dinner rush, the waiter informs me that 2 ribeyes have been ordered for very picky customers (whom I never cooked for before). He tells me that their steak has to be a perfect medium or the plate will be sent back.

After giving my best effort, I send the plates out and silently pray that they dont get set back. I am pleased when 5 minutes later the waiter tells me that everything is great. When the rush finally slows down, I have time to do table checks and I visit these two guests first. Without warning, one of them (who has a little too much to drink) reaches for my hand and kisses it. He tells me that the steak was the best steak he ever had from the restaurant, and continues to compliment me for about 10 minutes. I humbly accept, and invite both guests to come back to the restaurant again.

I walk back into the kitchen totally refreshed, I am no longer tired, I am no longer irritable. This guest made my day, this is why I am in this industry, I love knowing that my food has this kind of positive impact on people, and I felt I should share it with you guys.

appreciation in many ways is equal too or better than $......depending upon how flush your bank acct is.....

Sleep is not overrated.

A consultant friend of mine used to say, "everybody needs a pat on the back; some high up, some lower down."

I've always believed that those high-up back pats were the better motivator. It's amazing how far you can get with a "thank you" or a "you done good."

Indeed, unfortunately this has yet to happen for me, i really hope it does one day.
