I worked with baker's % in my bread baking class and was so traumatized by the 5 spread sheets that we had to turn in for each recipe that I SHREDDED EVERY SINGLE PIECE OF PAPER generated by that class!
Swore off bread for LIFE! lol
I will see what I can find..there may be a renegade recipe around here..lol

Not only did we have to do the math on baker's % , we had to do the baking and mixing method paper, convert the recipe and someother thing..I still can't talk about it....lol
You can convert the bread recipes to cake...since flour is flour and that % is always 100%.
