BRAN MUFFINS Low Fat High Fiber Recipe
Heat oven to 400 deg
3cupsAll-Bran cereal(Trader Joe has it for 1/2 the price)
3/4cupapplesauce(we like TJ's Gravenstein a-sauce)
2-1/2cupswhole wheat pastry flour
2cupsbuttermilk (or mix skim milk with 2 Tbsp lemon juice)
3/4cupor so of chopped dried apricots and dried cranberries,
raisins, or chopped dried figs
this is what we think makes it really great
Pour water over cereal and let stand
Mix together remaining ingredients then add softened cereal
Bake as many as desired in muffin tins sprayed with non-stick cooking spray. Bake for 15 minutes.
Recipe makes 24 medium muffins but you can cook whatever you want now
and keep the batter in the refrigerator for up to 3 weeks so you can have
hot muffins anytime you want.
That's the recipe- actually we bake the bunch and freeze them.
they heat up just fine in the microwave
You could experiment with the left-over fiber.
