Does anybody know what happens when you freeze lemon curd? I just found myself with about 3 quarts of it leftover from a job.

What can I do with so much when I don't have a use for it right now?

Also, I have 2 quarts of freshly seperated egg yolks. What can I do with it?

Maybe fill a tub with hollandaise and tell everyone to bring the ham and english muffins?:lips:

Was it properly refrigerated the whole time or was it ever left out of refrigeration? If it was safely stored, I would can those puppies! Kerr is your friend! ;)

I spose you could possibly freeze them. You may experience a texture change but if you do, I'd maye just try to use them in baking like in lemon pound cake or lemon genoise or something silly like that?

Hmmm have never made enough lemon curd to freeze it, but this link reckons you can:

As for the egg yolks - maybe lots of custard? Icecream? This site tells how you can freeze them:

Actually lemon curd freezes very well, but since you have the egg yolks why not make a vanilla icecream and then fold in the lemon curd.
